What We’re Eating This Week

This garlic rosemary chicken recipe has been on repeat in our house over the last few months. This is the easiest recipe and so good!

I don’t measure anything when I cook but I mix fresh rosemary, garlic, lemon juice, salt, pepper, and olive oil in a mixing bowl. Coat the chicken thighs in this mixture and place in a glass baking dish or cast iron skillet. I usually top with sprigs of rosemary and lemon slices and bake at 420 degrees for 40-45 minutes or until chicken is fully cooked. This pairs really well with garlic butter green beans and roasted potatoes.

We have been trying out some less processed snacks for Liam and I found this recipe from Weelicious. These cereal bars are the best! The ingredients are super simple and you can pick whichever cereal you want to make the bars.

I used Honey Nut Cheerios to make these and they have become a fan favorite in our house!

What I’m Reminiscing About

This time last year, we were in Maui with our best friends! We had the best time and can’t wait to go back! My first blog posts actually recapped this trip.

What I’m Loving

Spring is here! The weather this past week has been beautiful and I am here for the 70 degree sunny weather for the short time we have it here in Texas! Our country club plants these tulips every year in the spring and they are my favorite sign that spring is upon us!

What We’ve Been Up To

We have spent a lot of time in our backyard these last couple of weeks. Liam got a new swing set as an early birthday present and he loves it! Our weekend was spent outside swinging and watching him climb and slide. I can see that this is what our summer is going to look like, a lot of playing, grilling, and movies on the patio.

What I’m Dreading

I’m not really dreading anything…except pollen. Everything is already coated in green around here! I love spring and the beautiful weather it brings but the pollen can stay away!

What I’m Working On

I’m trying really hard to get into a good morning routine. It was a goal I set for myself at the beginning of the year and I had several good weeks where I woke up early to run and spend time with the Lord before everyone else woke up.. but the cold temps and then the time change got me. I’m working on getting back into that same routine and doing it consistently. I feel so much better when I start my day this way.

I took this while running one night right after Christmas ( you can see the Christmas lights on the houses). This is my favorite thing about running in the evenings when I miss my morning runs.

What I’m Excited About

I know this is silly but Will has started taking Liam to the putting green to practice golf and I am so excited! He is the cutest thing with his little golf bag and it makes my heart happy to see my guys out there together! I realize that as Liam gets older, he may develop new interests, but for now I love that he wants to be like his daddy and that they truly have a lot of fun out there together!

We don’t have a lot planned for this weekend. We are going to help my parents plant a few spring plants in their yard but otherwise I think we will be home on our back patio for the majority of the weekend if the weather allows.

Liam is turning 3! I’m looking forward to his birthday party and celebrating our (not so) little guy in April!

Christmas 2018 Recap

So you all remember that one time I decided to write a blog right? I know it has been months since I last posted but I have set goals to do better this year! I’m starting with a Christmas recap. Yes, I know it’s February but my reason for starting a blog was to document our lives and memories with Liam so I definitely want to capture our Christmas season.

We had the best Christmas this year! Liam was very into all of the Christmas traditions and it was fun to watch him really experience the season for the first time! We had a couple of visits to Santa and though he talked a big game, when it came down to it, Liam wanted nothing to do with Santa himself.

This was the best we could do. He let me stand beside Santa but he refused to smile or even look at the camera. Oh well, maybe next year! Look how sweet Santa and Mrs. Claus are!

We hosted Thanksgiving at our house as well as Christmas this year so I was insistent on waiting until after Thanksgiving to decorate for Christmas but Friday morning, the fall decor went into boxes and out came all of the Christmas decor. Liam loved it all so much. This was his third Christmas but he was finally old enough to help a little and he took his job very seriously (thank goodness for shatter proof ornaments)!

This is our favorite place to be and fortunately we have had some mild weather this season so we can be outside in front of the fire a lot.

This Nespresso Machine is our new favorite! We have really enjoyed espresso every day and Will makes a great vanilla latte. I didn’t know when I got a Nespresso for Christmas that it came with my own Barista but I’m not complaining a bit!

We hosted Christmas Eve and Christmas Day with our family and had the best time. Christmas Eve was with Will’s side of our family and we had homemade enchiladas with queso, salsa, guacamole, corn dip, rice, and beans. Is there anything better than Mexican food for Christmas? I don’t think so! On Christmas Day, my side of our family came to our house and we had chicken stuffed with crawfish étouffée and all of the sides to go with it. I’m highlighting the food because it was all so good! I was so focused on spending time with our family and having a good time that I didn’t take a single picture on either day (except for Christmas morning). I am determined to be better about taking good pictures this year.

Speaking of Christmas morning, this was breakfast. We made cinnamon rolls and Liam’s face in this picture makes me laugh! I feel the same way about cinnamon rolls, buddy!

Christmas morning was so fun. Liam woke up to a basketball goal in the sunroom and immediately started playing with it. We played basketball until breakfast and then enjoyed our cinnamon rolls and lattes in my new Nespresso machine (Will made me open it on Christmas Eve so we could use it Christmas morning). Will’s mom spent the night so she could spend Christmas morning with us. We opened presents after breakfast and had a nice relaxed morning before my parents and cousins arrived for a late lunch.

It was a great 2 days full of family, fun, and wonderful memories.

Liam got 2 cars for Christmas. Our friends got him this one and my parents got him the other one. I’ll be honest, this picture was taken a few days after Christmas because he was scared of both cars at first and it took about 2 weeks to get him to ride either one. I don’t have a picture of Liam in the car that my parents got him (again, I will get better). He hasn’t taken it outside yet and likes to ride it around the sunroom. It worked out perfectly to have one inside and one outside for the winter months. They will both go outside in the summer.

We ended the Christmas season (as has become our tradition) with a visit to our sweet friends (family), the Kings. It was a great opportunity to unwind and relax before jumping into the New Year.

And just like that, it’s February. How is that even possible? Will and I sat down in January and listed our individual goals as well as our goals as a couple. We put it in writing and added tangible timelines where it was applicable. If you know me, you know I live for a good list and I am so excited to work towards accomplishing all of our goals this year. I hope everyone had a wonderful Christmas and wish you all a very happy New Year!

Life Lately-Fall Edition

Fall is here! I know…it’s already November but I feel like the weather is just starting to feel like fall. And yes, our Christmas lights are going up any day now. It’s just the best time of the year!

Liam is having the best time this year. He is finally at a good age to understand the holidays and has been really excited by everything.

He especially enjoyed the pumpkin patch at Lane’s Chapel United Methodist Church. They have a great selection of pumpkins every year along with fun activities for the kids. Liam’s favorite part was riding in the wagon with the pumpkins.

I have never been a huge fan of Halloween (although I love all things fall) but having a toddler changes that a little. This year was a lot of fun! Liam loves the Three Little Pigs and his favorite part is when the wolf goes down the chimney so that’s what he wanted to be for Halloween and we found the cutest wolf costume. Unfortunately it stormed pretty badly on Halloween night so he didn’t get to trick-or-treat in our neighborhood but he had a party at daycare and got to trick-or-treat there so he was happy!

This past weekend we celebrated my grandmother (Babbie)’s upcoming 95th birthday!

Its amazing that she will be 95 this week! She is still as independent, sharp, and sassy as she always has been and does not “act her age” one bit. I am so glad we were all able to be there Saturday to celebrate this wonderful lady!

We are still in the midst of potty training at our house. Liam woke up Saturday and decided he was going to commit. He has been doing very well for the last few days and we are hoping this is it! My original thought is that I would share our potty training tips but I’m not sure we can take much credit for his progress. Everything we tried at first did not work. We started out with a seat that goes over the regular toilet seat with a step and he refused to use it after the first couple of times. We stuck with it for a while but finally gave in about 2 weeks ago and bought a little potty since that’s what he uses at school and church. He loved it from the beginning and sat a lot but never went. He woke up Saturday and said he wanted to “go potty” and has been going ever since (with a couple of exceptions). He is still in pull-ups because we aren’t brave enough to switch him to toddler underwear yet but I feel like it’s coming very soon. The end of diapers is so close and we are here for it!


On a funny (now-not at the time) note, this little stinker locked us out of the house yesterday! We were all outside on the back patio watching football and we had chili simmering on the stove for dinner. Liam went inside and before either of us could grab him, he locked the door! We were completely locked out-no key, the door into the garage was even locked and we had a moment of panic, while yelling through the window for him to unlock the door. It was only a minute before he unlocked it but oh my goodness it could have been much more difficult than that! We learned a good lesson and will not be outside without a key or open door somewhere else from now on.

This is basically our life lately. Will is in a very busy season of work so when he is home, we take full advantage of quality family time. We have spent a lot of time at home and playing outside with Liam while the weather has been so nice. I’m excited for Thanksgiving in just a couple of weeks and then let all of the Christmas decorating begin! Until then, Happy Fall!


What I’m Loving Lately

My goodness this has been a busy summer! We spent a lot of time together as a family and had so much fun with friends too! With the end of summer approaching and fall right around the corner, I thought I would share a few things I’m loving lately.

1.  College football

The temperature is still reaching mid to high 90s here but it’s September and college football is back! It really is my favorite time of the year! I love the fall season so much and football kicks it off in the best way.

This was last year at the A&M, South Carolina game. We had so much fun that we decided it would be a great friend tradition to go to a game every year. I can’t wait for this year’s game!

2. Cold Brew Coffee

I know this is a bit random but cold brew coffee is one of my new favorite things. I love hot coffee but I have to add a little bit of creamer to it. I have been trying to cut out the creamer but I just do not enjoy black coffee. My friend, Michaela, suggested trying this cold brew as an alternative to regular coffee and it is amazing! I still drink hot coffee a lot of mornings but this is a great option, especially while it is still so hot outside! It’s unsweetened and has such a rich bold flavor but does not need anything added to it. I highly recommend it!

3. My new water system

A few months ago I realized that I was not drinking nearly enough water during the day. I took my Yeti to work every morning filled with water and some days it would still be halfway full at the end of the day. So I picked up this H20 water bottle which holds 75 ounces of water and decided to start taking it with me everyday. It helped a little but I still brought most of it home everyday. A couple of weeks ago I filled up my H20 bottle with water and my Yeti with ice and took both to work. I started pouring the water into my cup and drinking it with ice and a straw. Now I realize this is a very long description of how I drink water and you may be wondering why, but stick with me here because I’m telling you, this worked! I was able to track how much water I drank by pouring it out of the H20 water bottle into my cup and I had a visual sitting on my desk of how much I still needed to drink. For some reason, I drink more water through a straw and if it’s ice cold. By 10 am the first day, I was over halfway through the water bottle! For the last 2 weeks I have had at least 75 ounces of water a day. I feel like I have accomplished a huge goal! So if you have trouble getting your daily water intake in, give the H20 water bottle a try. I found mine at the Walmart Neighborhood Market.

4. Sweet Potato Hash

This sweet potato hash has been on repeat lately at our house. It is the perfect meal to transition into fall and makes a great week night meal or a weekend brunch. This recipe is from Shay Shull of Mix and Match Mama.  We have tried several of her recipes and they never disappoint! We will be eating this dish a lot this fall and winter season.

5. Our 6th Anniversary

Will and I celebrated our 6th anniversary last week. I cannot believe we have been married for 6 years already. Sometimes it seems like it was just yesterday and other times it seems like I have loved this guy my entire life. It’s just crazy how fast time goes and how much life has changed in those 6 years. We celebrated (officially) our anniversary when we went to Hawaii earlier in the year but on Friday we had a boat date on the lake with a picnic lunch. We had the best time relaxing on the water for a few hours. As usual, I did not take any pictures of us but the day was just beautiful! I am so excited to see what God has in store for us this next year and am so thankful that I have Will by my side for all of it!

Summer Update

Here I am finally giving a little update on our life lately! We have been a little crazy around here over the last couple of months. In June, we moved into a new house and have been slowly getting settled. We still have so much to do but it’s coming along!

Liam and I went to Hollytree Country Club with our good friends to watch the fireworks on the Fourth of July. This is something we usually do every year but this is the first year Liam was old enough to run around and play.

Will was out of town helping with our church’s youth camp that week and we missed him being with us but we had a good time and Liam loved playing on the driving range while we waited on the fireworks.

They had Pokey O’s food truck out on the driving range while we waited for it to get dark and y’all, this is the best ice-cream sandwich I have ever had. I don’t eat gluten and they have a gluten free chunky chocolate pecan cookie! The ice-cream filling was sea salt and caramel. I am including this because there are not many desserts that I can eat and this was such a good treat!

We get together almost every Sunday night with our best friends, the Burks. In the winter we started going to Sunday night “Soup Night” at Hollytree where they have a variety of soups and a baked potato and salad bar. We went almost every week and the kids would go outside and run around in the tennis court area after we ate. As it got warmer we started doing “Soup Night” at our house so the kids would have longer to play outside.

These two are such good buddies and have had so much fun playing together every week.


A few weeks ago we had the idea to get water tables for both houses so the kids would have something to play with that could help keep them cool. They have loved these so much and are usually soaked by the end of the night.

What’s a summer night if it doesn’t include getting soaked from the water faucet?

A couple of weeks ago, we surprised Will with a family party for his birthday. There was so much going on that I didn’t remember to take many pictures but it was so much fun pulling off the surprise. He didn’t catch on to any of it until a few minutes before the first guests arrived!

We had a nacho and taco bar for dinner and it was all so good!

So basically this is our summer! It has included a lot of water and later nights than usual but has been so much fun! We have had a blast with friends and family this summer and can’t wait to see what is in store for the rest of it!

Summer is Here!

Life lately has been crazy, busy, and a little stressful, but there are some exciting things coming up.

I went to San Diego a couple of weeks ago for a conference related to my job. This was my fourth time to visit San Diego and it is one of my favorite cities. We stayed on Coronado Island which was beautiful! The ferry was walking distance from our hotel and it dropped us off right behind the convention center so this was our favorite way to cross the bay.

The last time I stayed on Coronado Island, I stayed at the Hotel Del Coronado and it was absolutely beautiful. I snapped this picture in front of the Del on this trip. Those flowers were amazing!

The last time I was in Coronado, I was with my Mother-in-Law, Linda. She took me as her guest on a trip she earned for her job. We stumbled upon this restaurant, Leroy’s Kitchen, on the first day we were there and it was so good! I went there again on this trip and had brussel sprouts in an asian BBQ sauce and truffle fries with aioli and pomegranate ketchup. Oh my word!

It was a really good conference and fun to visit San Diego again for a few days.

Summer is officially here and this kid cannot get enough of the pool. This is his first summer to spend a lot of time in the water and he loves it.

This never happens! He was worn out after an afternoon at the pool. I’m sure this is what most weekends will look like for the rest of the summer.

More exciting things are coming up! We bought a new house and are moving this next week! This month has been fast and furious but we cannot wait to move and settle in to a new house and neighborhood. It’s going to be a fun summer!



A Little Update on Life

Life has been a little crazy lately! We have a lot going on and I can’t wait to share more details but for now, I thought I would give a little life update over the last month or so.

I had my 30th birthday at the end of last month and I have a lot of feelings about that. I love the start of a new year and choose to set goals for myself on my birthday instead of on January 1st. I don’t know if it’s because  I feel like 30 warrants bigger goals but I am taking more time to think about what I want this year to look like and I’m excited to see what the next year holds!

We celebrated at my favorite restaurant in Tyler, Bernard’s. It’s Mediterranean food and is wonderful! Give me all the seafood all the time and I am a happy girl! Creme Brûlée  is my absolute favorite dessert and Bernard’s does not disappoint!

The weather has been amazing lately so we are spending a lot of time outside. FRESH by Brookshires is a local grocery store that has an amazing patio with tons of prepared food options and a patio grill.

FRESH also has the cutest little playground area on the patio and my friend, Michaela, and I like to come here with the kiddos to eat and let them run off some energy. How are they so big!?

This cutie loves to run with me. Every day, he asks if we can “go run in the stroller.”

I love this time of year. Pictures never do a setting sun justice but I thought this was so pretty!

Liam got golf clubs for his birthday and Will has been teaching him how to play. I never get tired of watching them out there together.  I know it won’t be long at all before he is out on the actual golf course with Will.

So you can find us outside soaking up this beautiful weather for the next few months,  or until the Texas heat becomes too unbearable.



Liam’s 2nd Birthday

This weekend we had Liam’s 2nd birthday party. I am having a lot of feelings over the fact that we have a two year old! How did this happen?? With that being said, we absolutely love this stage with him. If you have ever spent any time with Liam, you know that he is full of personality. He is just the sweetest kid and is truly fun to be around (most of the time, he is a toddler).

Liam has started to love watching golf on TV with Will and it is the cutest thing to listen to his little commentary. We decided to get him a set of toddler golf clubs for his birthday. We gave it to him on his actual birthday so he could play a little and he loved it!

On Saturday, we had Liam’s birthday party and the theme was a backyard cookout. Our friend’s, Zach and Michaela, hosted the party at their house and Zach smoked brisket! They have a beautiful outdoor patio space that is covered, which helped to take away some of the stress over the crazy spring weather we are having.

Along with the brisket, we had all of the cook out essentials: baked beans, potato salad, mac and cheese, kettle chips, and PB&J’s for the kids. We had s’mores that could be done in the fireplace, along with the cookie cake for dessert. The weather was forecasted to be stormy and cool but it turned out to be wonderful weather. It was just cool enough to enjoy a fire in the outdoor fireplace and it did not start to rain until the very end.

Liam loved, well,  mostly the icing off his cookie cake!

Of course, we managed to make it through the entire day without taking a single picture of the three of us together. We just enjoyed visiting with everyone and didn’t think to grab any group photos.

We are so thankful for our friends and family who helped us celebrate Liam’s second birthday. He had so much fun and so did we!


Why Blame It On Bekah

Happy Saturday friends! I’ve had several people ask me how I came up with the name for my blog. I wish I could say it was a super creative process that resulted in a name with a personal meaning behind it, but honestly, it just popped in my head one day and it sounded catchy and just kind of stuck. I decided I wanted to start a blog almost a year ago but had no idea how to start and quite frankly, the whole process intimidated me. I still had this strong feeling that it was something I was supposed to do and I knew I needed to stop making excuses and just do it.  Above all, my intention for this blog is to capture our family’s everyday life and milestones that we want to remember but I also hope that it can be a good resource for recommendations of things that I love, places we like to eat, favorite things to do, etc…

Speaking of favorite things, I’m reminiscing about our recent vacation! Especially since it is 40 degrees today!

Another favorite in our house this weekend is the Masters! We are all in for this tournament. It’s the only golf I watch all year and I love it!

And a fire in the fireplace for (hopefully) the last time this season.

I’ve been watching this guy play golf for almost 6 years now. It’s his favorite hobby and this picture takes me back to before kids when one of my favorite things to do was to ride in the cart and read a good book while Will played golf. It’s crazy to think that we are almost back to enjoying these days, but now with a little golfer out there with his dad.  Liam is already all about “golf with Daddy” and I cannot wait until they are out there on the course together!

Easter Weekend

Today was Easter Sunday!

We attempted pictures before church but this was the best we could get. This guy has been sick all week and this was the first day that he was back to his normal self so he was BUSY today and had no interest in posing for pictures.

We went to church and then headed home to grill hamburgers for lunch.

After a great lunch and Liam’s nap, we ventured out to attempt to get a few good Easter pictures.

The Azaleas bloomed just in time for Easter and are absolutely beautiful right now! If you are in Tyler, drive through the Azalea District or Hollytree and enjoy while they are in full bloom.

This is Liam’s favorite spot! He loves the water fountain at Hollytree Country Club.

We had a great weekend with family! On Saturday we went to my parent’s house for lunch and had a lot of fun eating good food and visiting. I was so caught up in the fun that I didn’t take a single picture.

This morning we went to Sunday school and then Will’s mom met us for the church service and came over to our house for lunch. It was a relaxing holiday weekend, which is the best!

Easter weekend always includes a lot of food, Easter-egg hunts, family, friends, and fun but the true reason we celebrate is our Risen Savior! Jesus gave His life on the cross so that we can live for eternity with Him. Today I rejoice that He is ALIVE and is living in me! I rejoice that my debt is paid! I rejoice that by grace I am saved! Today we celebrate the gift of victory!
